Have you ever had pickled cucumbers? And no, I don’t mean pickles! I know, right, when I first heard about this I was like, um…aren’t those just regular pickles?!?
My Mom got me addicted to these! She has them on her salad all the time and even brought some with her when my parents came down for a visit! So I finally decided to make my own! I’d been waiting for the cute little cucumbers to go on sale and guess what, last weekend was my lucky chance! We got a bag of 10 of them on our Costco trip! I don’t think it matters what kind of cucumbers you use but the baby ones are what my Mom uses so I went with those!
2. Fill the jar 1/2 way with Cider Vinegar.
My Mom suggested a bunch of different combinations to try: rice vinegar and balsamic vinegar, red wine vinegar, white vinegar and balsamic, apple cider vinegar…there are like a million different types of vinegar! Who knew!!?!
You can use any combination of these you’d like, I used 3/4 white vinegar and 1/4 balsamic vinegar.
3. Add 1.5 teaspoons of sugar
4. Add 1 teaspoon of salt
5. Shake it up!
6. Let it sit in the fridge for at least 12 hours and then enjoy! After about 12 hours you can taste test to see if you’d like to add more sugar or salt.
